1 Tbsp. olive oil
1/2 onion, chopped
3 carrots, sliced
1/4 tsp. salt
1/2 tsp. freshly ground black pepper
2 cloves garlic, minced
1 lb. kielbasa, cut into bite-sized pieces
4 cups chicken broth
1 (15 oz.) can great northern beans, rinsed and drained
1 bay leaf
4 cups kale, chopped
2 Tbsp. grated Parmesan cheese

Heat oil in a large pot over medium heat. Add onion, carrots, salt and pepper, cook for about 5 minutes or until tender. Add garlic and cook for 30 seconds. Add kielbasa and cook for 3 more minutes.

Add chicken broth, beans and bay leaf. Turn heat to high and bring to a boil. Stir in kale then cover with lid, turn heat down to medium-low and simmer until kale is tender, about 15 minutes. Stir in grated cheese.

Remove bay leaf and serve with additional cheese sprinkled on top.
