Ingredients
1/2 lb. sweet Italian sausage
1/4 cup chopped bacon
1 cup frozen chopped spinach
1/4 cup Gia Russa Sweet Pepper Bruschetta
1/4 cup Gia Russa Artichoke Bruschetta
1/4 cup Gia Russa Pesto Alla Genovese
1 1/2 cups liquid eggs, or 10 large eggs
3/4 cup shredded Italian blend cheese
Salt and pepper to taste
Gia Russa Romano Cheese

Directions
Preheat oven to 350º.

Cook sweet Italian sausage and bacon separately. Let cool. Chop bacon. Microwave spinach on high for 2 1/2 minutes. Drain excess liquid. Spray a 12 cup muffin pan with cooking spray.

Combine sweet pepper bruschetta and sausage. In a separate bowl, combine artichoke bruschetta and spinach. In a separate bowl, combine pesto and bacon. Evenly divide each mixture between 4 cups.

Whisk eggs and add salt and pepper. Evenly divide eggs in muffing pan. Evenly divide cheese and stir. Bake for 25 to 30 minutes, or until egg is cooked through. Serve immediately or freeze and reheat in the microwave when ready to serve.
