Mexican Pasta Bake
Try this veggie-loaded pasta bake; it’s bursting with flavor and feeds a crowd!

1 lb. penne pasta
1 lb. bulk sausage
1 (15 oz.) can black beans, rinsed and drained
1 (15 oz.) can tomato sauce
2 cups mixed frozen vegetables
1 1/2 cups shredded Colby Jack cheese, divided
1 cup sour cream
Chopped cilantro and green onions, for garnish

Preheat oven to 350º.

Spray 9 x 13-inch baking dish with nonstick cooking spray. Cook pasta according to package directions. Set aside. Meanwhile, in large skillet cook sausage over medium-high heat for 8 to 10 minutes. Add beans, tomato sauce, vegetables, 1 cup cheese, sour cream and sausage to pasta; stir until everything is well combined. Pour into prepared baking dish. Sprinkle with remaining cheese. Transfer to oven and bake for 25 minutes or until edges are bubbly. Garnished with cilantro and green onions.
