Quinoa Mac and Cheese
2 tsp. olive oil
1 cup chopped green onion
1/2 cup diced red pepper
1 1/2 cups quinoa, rinsed and drained
2 cloves garlic, minced
3 cups water
1/2 tsp. salt
1/2 tsp. seasoned salt
2 eggs
1 cup milk
1 1/2 cups grated Cheddar cheese
1/4 tsp. ground mustard
1 cup seasoned bread crumbs

Preheat oven to 350º.

Heat oil in a medium saucepan over medium heat. Add green onion and red pepper; cover and cook for 5 minutes or until tender. Stir in quinoa and garlic. Cook for 3 to 4 minutes, or until grains start to turn opaque.

Add water and season with salt. Cover and reduce heat to medium-low. Simmer for 15 to 20 minutes, or until liquid has been absorbed. Remove from heat and let stand for 5 minutes.

Coat 9 x 13-inch baking dish with cooking spray. In a large bowl whisk together eggs and milk. Fold in quinoa mixture, ground mustard and cheese; stir well. Transfer to prepared baking dish and sprinkle breadcrumbs overtop. Bake for 30 minutes.
