2 Tbsp. butter
2 cloves garlic, minced
1/2 cup chopped green onions
5 cups spinach
1/4 tsp. salt
4 oz. cream cheese
1/4 cup grated Parmesan cheese
1/2 loaf French bread
1/2 cup shredded white Cheddar cheese
1/2 cup shredded mozzarella cheese
Preheat oven to 400°.
In a large pan melt butter and add garlic, green onions, spinach and salt. Sauté for 3 to 5 minutes, or until spinach is wilted. Add cream cheese, heat until melted and then add Parmesan.
Slice bread in half lengthwise and place on a lined baking sheet, cut sides up. Spoon spinach mixture over both of the loaves and top with cheeses. Bake for 15 minutes. Once cooled, cut into squares.
