Chocolate Chip Banana Oatmeal Cookies
These cookies will melt in your mouth. They’re made with no butter or eggs!

Directions
3/4 cup whole wheat flour
1/2 cup rolled oats
1/2 tsp. baking powder
1/4 tsp. salt
1 Tbsp. coconut oil, melted
1 ripe banana, mashed
1/4 cup brown sugar
1 tsp. vanilla extract
1/3 cup chocolate chips

Ingredients
Preheat oven to 350º.

Line a baking sheet with parchment paper and set aside. In a large mixing bowl combine flour, oats, baking powder and salt. Set aside.

In a medium mixing bowl, whisk together coconut oil, banana, brown sugar and vanilla. Mix wet ingredients into dry ingredients until combined. Fold in chocolate chips. Using a rounded tablespoon, drop dough onto prepared baking sheet and flatten slightly.

Bake for 12 to 14 minutes or until edges begin to turn golden brown. Remove from oven and let cool for 5 minutes before transferring to a cooling rack to cool completely.
