1 puff pastry sheet, thawed
1 (10 oz.) package frozen chopped spinach, thawed and squeezed dry
1 cup ricotta cheese
1/2 cup shredded Mozzarella cheese
1/4 cup Parmesan cheese
1/4 tsp. garlic powder
1 tsp. red pepper flakes
1/4 tsp. salt
1/4 tsp. freshly ground black pepper
Lay puff pastry sheet flat on a cutting board. In a medium bowl mix spinach, cheeses, garlic powder, red pepper flakes, salt and pepper. Spread mixture on puff pastry, leaving about 1/2-inch border.
Roll one side of puff pastry into the center. Then roll the other side into the center. Wrap tightly with plastic wrap and place in freezer for about 30 minutes.
Preheat oven to 400º.
Remove plastic and cut into 1/2-inch slices. Place on a baking sheet and bake for about 20 minutes or until golden brown. Serve warm.
