Cauliflower and Bacon Casserole

1 small head cauliflower
2 tsp. olive oil
1/2 onion, sliced
2 cloves garlic, minced
1/2 cup plain Greek yogurt
1/2 tsp. salt
1/2 tsp. freshly ground black pepper
1/2 cup shredded sharp Cheddar cheese
1/8 tsp. paprika
6 strips bacon, cooked and crumbled
1/4 cup chopped green onion

Preheat broiler.

Cut cauliflower into florets and steam for about 20 minutes, until tender. In small skillet, heat oil and sauté onion until translucent. Add garlic and sauté until onions are browned. Set aside.

Transfer cooked cauliflower and yogurt to a food processor; process until smooth. Season with salt and pepper. Scrape mixture into a baking dish and sprinkle cheese and paprika overtop. Broil until cheese is melted. Top casserole with sautéed onions, bacon and green onion.
