Savory Tomato Tilapia
Enjoy this tomato tilapia; it’s quick and pairs nicely with a light-bodied white wine.

4 tilapia fillets
1/4 tsp. seasoned salt
1 Tbsp. lemon juice
2 Tbsp. olive oil
1 red onion, chopped
1 (10 oz.) can diced tomatoes and green chilies, undrained
3/4 cup chopped roasted red peppers
1/2 cup vegetable broth
1/4 cup tomato paste
3 cloves garlic, minced
1 tsp. dried oregano

Sprinkle fillets with salt and drizzle with lemon juice.

In a large skillet heat oil over medium-high heat. Sauté onion until translucent. Add tomatoes, peppers, vegetable broth, tomato paste, garlic and oregano. Cook and stir for 2 to 3 minutes.

Over tomato mixture, cook fillets covered for 6 to 8 minutes or until fish flakes easily with a fork.
