Spinach and Basil Artichoke Toasts
Spinach and basil artichoke toasts make a colorful appetizer for football tailgates and gatherings. It only takes 10 minutes to make!

1 clove garlic, peeled
1 (14 oz.) can chickpeas, rinsed and drained
1/2 cup fresh basil, divided
2 Tbsp. freshly squeezed lemon juice
1/3 cup olive oil
1/2 tsp. salt
1/4 tsp. freshly ground black pepper
1 1/4 cup artichoke hearts, drained and chopped
2 cups spinach
10 small pieces French baguette bread, toasted

Pulse garlic, chickpeas and 1/4 cup basil in a food processor until finely minced.

Cut remaining basil into ribbons. Toss chickpea mixture with lemon juice, remaining basil, olive oil, salt, pepper and artichoke hearts.

Add spinach just before serving and stir. Serve on toasted bread.
