Turkey and Quinoa Meatballs in Lettuce Wraps

This meatball recipe is stuffed with healthy goodies, including turkey, quinoa and zucchini.

1 1/4 lbs. ground turkey
1 cup cooked quinoa
1/2 onion, grated
3 cloves garlic, minced
1/2 cup grated zucchini
1/4 cup chopped parsley, squeezed dry
1/4 tsp. crushed red pepper flakes
2 Tbsp. soy sauce
1 tsp. ground oregano
1/2 tsp. freshly ground black pepper
1 egg, beaten
2 cups tomato sauce
9 large butter lettuce leaves
6 Tbsp. grated Parmesan cheese

Preheat oven to 350º.

In a large bowl, combine turkey, quinoa, onion, garlic, zucchini, and parsley, reserving some for garnish, red pepper flakes, soy sauce, oregano, pepper and egg. Mix well to combine.

Form 1-inch meatballs and place on prepared baking sheet, spacing evenly. Bake for about 20 minutes, until meatballs are firm to the touch and cooked through.

Heat tomato sauce in a large saucepan over medium heat. Transfer meatballs to tomato sauce and gently stir to coat meatballs. Serve 2 meatballs in each lettuce wrap. Garnish with Parmesan cheese and parsley.
