Veggie & Cheese Dip
Love vegetables? Try this veggie and cheese dip! It’s full of flavor and healthy ingredients.

1 eggplant, peeled and chopped
1 cup chopped onion
1 cup chopped red pepper
3 cloves garlic, minced
1/4 cup sun-dried tomato vinaigrette dressing
1 zucchini, chopped
1 tomato, chopped
1/4 cup grated Parmesan cheese
1/2 cup shredded Mozzarella cheese
Multigrain crackers

In a large skillet, cook eggplant, onion, red pepper and garlic in dressing on medium heat for 8 minutes.

Add zucchini and tomatoes. Cover and simmer for 5 to 7 minutes or until tender. Stir in Parmesan cheese.

Spoon into a serving bowl. Sprinkle with Mozzarella cheese and serve with crackers.
