Corn Chip Snack Mix
Need a packable lunch snack? It’s easy to make and perfect for the kids lunches all week.

1 (10.5 oz.) bag corn chips
2 cups rice cereal
2 cups pretzel twists
1 1/2 cups walnuts or peanuts
1 cup raisins
1 cup brown sugar
1 stick butter
1/2 cup corn syrup
1 cup of mini M&M’s

Preheat oven to 350°.

In a large bowl combine corn chips, rice cereal, pretzels, nuts and raisins. Set aside.

In a small saucepan melt sugar, butter and corn syrup over medium heat. Let mixture come to a boil and then boil for 4 minutes without stirring. Remove from heat and pour over corn chip mixture. Stir to coat. Transfer mixture to a large roasting pan and bake for 8 minutes. Stir mixture and bake for an additional 8 minutes.

Transfer mixture to wax paper to cool. When cooled, break into small chunks and sprinkle in M&M’s. Store in an airtight container for up to a week.
