1 cup milk
6 large eggs
1/3 cup maple syrup
1/4 cup brown sugar
2 tsp. ground cinnamon
1/4 tsp. nutmeg
2 tsp. vanilla extract
1/4 tsp. salt
12 oz. bread, cut into 1/2-inch cubes
Fruit, nuts or chocolate chips for topping
Preheat oven to 350°.
Spray muffin tin with cooking spray. In a large bowl, mix milk, eggs, maple syrup, brown sugar, cinnamon, nutmeg, vanilla and salt. Whisk until well combined. Add bread to egg mixture. Stir to coat. Let bread rest in eggs for 10 minutes. Stir twice during the resting process.
Spoon bread mixture evenly into muffin tin, pressing down on each one as needed so that it will fit into the cup. Add your toppings to each muffin cup. Bake for 25 minutes, until edges turn golden brown. Cool for 10 minutes and enjoy.
