1 Tbsp. olive oil
1 cup chopped onion
3/4 tsp. salt
1/4 tsp. freshly ground black pepper
1 cup quinoa
1 1/2 cups water
2 cups chopped broccoli
1/4 cup raisins
1/2 cup chopped roasted almonds
1/4 cup chopped green onions

Heat oil in a medium saucepan over medium-high heat. Add onion and season with salt and pepper. Cook for 3 to 4 minutes,stirring occasionally, until softened and starting to brown.

Add quinoa and water to the saucepan and bring to a boil. Reduce heat to low, cover and simmer for 10 to 12 minutes. Fold in broccoli and raisins. Cover and cook for 8 to 10 minutes, until quinoa and broccoli are tender. Remove from heat and fold in almonds and onions.
