Try these easy to make personal sized pizzas for the whole family!
4 (6-inch) round pizza crusts
3 Tbsp. prepared pesto
1 lb. shrimp, peeled and deveined, tails removed
1 1/2 Tbsp. olive oil
2 cloves garlic, minced
1/4 tsp. salt
1/4 tsp. freshly ground black pepper
1 cup shredded Mozzarella cheese
2 oz. crumbled feta cheese
Preheat oven to 400º.
Place pizza crusts on a nonstick baking sheet, evenly distributing pesto over each crust; set aside. Coat shrimp with olive oil and sprinkle with garlic, salt and pepper. In a large sauté pan over medium-high heat, sear shrimp for about 1 minute, flip and cook for another 30 seconds.
Place 5 shrimp on each pizza and sprinkle with cheeses. Bake for 20 minutes, until cheese starts to brown on the edges. Let cool and serve.
