Veggie-Wraps_FIxedThis Veggie Hummus Wrap makes for a delicious and healthier lunchtime meal!


  •  2 Tbsp. olive oil, divided
  • 1/2 red onion, cut into 1/2-inch pieces
  • 1 red bell pepper, seeded and quartered
  • 1 (12 oz.) eggplant, cut into 1/2-inch slices
  • 1/4 cup chopped parsley
  • 1/8 tsp. salt
  • 1 (8 oz.) container plain hummus
  • 4 whole-grain flatbreads
  • 1/2 cup crumbled feta cheese
  • 1 tomato, sliced


Heat a large pan over medium-high heat. Add 1 tablespoon of oil, onion and bell pepper to pan; cook for 3 to 5 minutes. Add eggplant and cook for an additional 3 to 5 minutes or until tender. Add remaining oil, parsley and salt; toss to combine.

Spread hummus over each flatbread. Divide vegetables over each flatbread and top with cheese and tomato.
