Caramelized Pork TacosIngredients

  • 1 lb. boneless center cut pork loin, cut into thin strips
  • 1 shallot, minced
  • 2 cloves garlic, minced
  • 2 tsp. Worcestershire sauce
  • 1/2 cup crushed pineapple
  • 1/2 cup diced cucumber
  • 1/3 cup sliced green onions
  • 2 Tbsp. freshly squeezed lime juice
  • 1/4 cup chopped cilantro
  • 1/4 cup diced onion
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 2 Tbsp. olive oil
  • 2 tsp. sugar
  • 2 tsp. water


Flour or corn tortillas for serving

In a bowl, mix together pork, shallot, garlic and Worcestershire sauce. In a separate bowl, mix together pineapple, cucumber, green onions, lime juice, cilantro and onion. Season with salt and pepper. Set aside.

Heat cast iron pan over medium-high heat and add oil to the pan. Cook pork for 2 minutes or until cooked through. Add sugar and water. Stir and cook for another 3 minutes or until the sugar caramelizes and turns golden brown. Remove from the pan and set aside. Serve pork on warmed tortillas with pineapple salsa.
