beet hummus


  • 4 medium beets
  • 3 cups water
  • 2 Tbsp. tahini
  • 4 Tbsp. freshly squeezed lemon juice
  • 1 Tbsp. lemon zest
  • 2 cloves garlic, minced
  • 1 Tbsp. ground cumin
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • Cucumber slices or pita chips for serving

Cut off the tops of the beets and scrub the roots clean. Place in a saucepan covered with water and simmer until tender, about 30 minutes. Peel beets once they have cooled.

Place beets, tahini, lemon juice, lemon zest, garlic, cumin, salt and pepper in a food processor and pulse until smooth. Serve with cucumber slices or pita chips.
