• 1 Tbsp. butter
  • 1 red onion, thinly sliced
  • 5 cups cubed bagels
  • 8 oz. crumbled smoked salmon
  • 2 Tbsp. chopped dill
  • 8 oz. cream cheese, cut into half-inch cubes
  • 8 large eggs
  • 2 cups half and half
  • 1 tsp. salt
  • 1 tsp. freshly ground black pepper
  • 1/4 cup chopped parsley


Preheat your oven to 350°.

In a large saute pan, heat butter over medium-high heat until it is foaming. Add red onion and cook until softened and starting to brown, about 5 to 7 minutes.

Layer the cubed bagels, salmon, onions, cream cheese and dill in a 9 x 13-inch baking dish coated with nonstick cooking spray. In a large bowl whisk together eggs, half and half, salt and pepper. Pour the egg mixture over the bagels. Cover and let sit for 45 minutes.

Bake for 45 minutes or until the eggs are set. Allow to cool for about 10 to 15 minutes before cutting. Serve warm or at room temperature.
