Coconut Chicken Tenders

These Coconut Chicken Tenders make a delicious lunch or dinner!


  • 1 cup vegetable oil
  • 2 lbs. boneless, skinless chicken breasts cut into strips
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 2 large eggs
  • 1 tsp. soy sauce
  • 1 tsp. Sriracha
  • 1/2 tsp. garlic powder
  • 1/4 tsp. ground ginger
  • 2 Tbsp. water
  • 1 1/2 cups baking mix
  • 1 cup shredded sweetened coconut
  • 2 Tbsp. chopped fresh cilantro
  • Sweet and sour sauce for serving

Heat vegetable oil in a large skillet over medium-high heat. Season chicken with salt and pepper.

In a large bowl, whisk together eggs, soy sauce, Sriracha, garlic powder, ginger and water. In a separate large bowl, combine baking mix and coconut.

Working one at a time, dip chicken into egg mixture, then dredge in baking mixture, pressing to coat. Add chicken to the skillet. Cook until golden and crispy, about 3 to 4 minutes on each side. Transfer to a paper towel-lined plate. Serve immediately with sweet and sour sauce, garnished with cilantro.
