Chocolate Mint Brownies

This mint chocolate combination is rich and delicious!


  • 1 box brownie mix
  • 2 1/2 cups powdered sugar
  • 8 Tbsp. butter or margarine, softened, divided
  • 1/3 cup and 3 Tbsp. whipping cream, divided
  • 2 oz. cream cheese, softened
  • 1/2 tsp. mint extract
  • 2 drops green food color
  • 1 1/3 cups semi-sweet chocolate chips


Preheat oven to 350°.

Make and bake brownie mix as directed on box. Let cool. In large bowl, beat sugar, 3 tablespoons of  butter, 3 tablespoons of whipping cream, cream cheese, mint extract and food color until smooth. Spread over cooled brownies. Refrigerate about 1 hour or until set.

Meanwhile, in a nonstick saucepan, heat remaining butter, remaining whipping cream and chocolate chips over medium-low heat, stirring constantly, until melted and smooth. Cool about 10 minutes or until lukewarm.

Pour topping mixture over cooled brownies and refrigerate uncovered about 2 hours or until set. Before cutting into bars, let stand 10 minutes at room temperature.
