Honey hot sauce is paired with this pleasing appetizer.
- 10 strips thick-cut smoked bacon
- 20 chunks fresh pineapple
- 3/4 cup packed brown sugar
- 1/4 cup honey
- 2 tsp. Sriracha
- 2 tsp. soy sauce
- 4 tsp. fresh lime juice
- 1 Tbsp. finely sliced fresh cilantro stems
Preheat oven to 400˚.
Line a sheet pan with foil. Cut bacon strips in half width-wise. Wrap each pineapple chunk with bacon. Place brown sugar on a large plate and roll each bacon wrapped pineapple in brown sugar to coat. If needed, pat more sugar to completely coat rolls.
Place rolls, seam side down, on the prepared pan. Bake for 20 to 30 minutes or until deep golden brown.
In a medium bowl combine honey, Sriracha, soy sauce, lime juice and cilantro. Mix well and serve with bacon wrapped pineapple.
