Take this easy, but different treat to your next holiday gathering.
- 1 stick butter, melted
- 2 1/4 cup graham crackers crumbs
- 3 Tbsp. light brown sugar
- 1 1/2 tsp. cinnamon, divided
- 1 tsp. nutmeg
- 1 quart eggnog
- 2 (5.1 oz.) packages vanilla instant pudding mix
- whipped cream for topping
Melt the butter in a large mixing bowl. Add graham crackers, brown sugar, 1 teaspoon of cinnamon and 1/2 teaspoon of nutmeg. Stir until all combined. Press mixture evenly on the bottom and the sides of a 9” round pan. Refrigerate for 5 to 10 minutes.
In a large mixing bowl, combine eggnog and vanilla pudding mixes. Start mixing on low for about 1 minute. Sprinkle in the remaining cinnamon and nutmeg. Mix on high speed for 2 minutes.
Pour eggnog mixture into the prepared crust. Refrigerate until well set. Top with whipped cream and a sprinkle of cinnamon.
