Sweet Potato Pie

This isn’t your typical fall pie


  • 2 (1lb.) sweet potatoes
  • 1 stick butter, softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1/2 tsp. ground nutmeg
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. ground cloves
  • 1 tsp. vanilla extract
  • 1 (9-inch) unbaked pie crust
  • whipped cream for topping


Preheat oven to 350º.

Boil sweet potatoes whole in skin for 20 to 30 minutes, until softened. Run cold water over the sweet potato and remove the skin. In a medium bowl, break apart sweet potato. Add butter and mix well with mixer. Stir in sugar, milk, eggs, nutmeg, cinnamon, cloves and vanilla. Beat on medium speed until mixture is smooth. Pour filling into an unbaked pie crust.
Bake for 55 to 60 minutes or a toothpick inserted in center comes out clean. Serve warm with whipped cream.
