Peanut Butter Banana Crepes

This recipe is super easy and fun! Add strawberries and chocolate chips if desired.

 Ingredients

  • 1 cup all-purpose flour
  • 1/4 tsp. salt
  • 1 egg
  • 1 egg yolk
  • 1 cup milk, or as needed
  • 1 tsp. vanilla
  • 1 Tbsp. melted butter
  • 1 cup peanut butter or hazelnut
  • chocolate spread
  • 5 bananas, sliced
  • 1 can whipped cream

In a large bowl, sift together flour and salt. In a separate bowl, mix together egg, egg yolk, milk and vanilla. Slowly pour the wet mixture into the dry, stirring constantly. Add butter and beat well until smooth.

Heat a well greased 6-inch skillet. Add 1/4 cup of batter. Move skillet from side to side until batter covers bottom. Cook for 2 to 3 minutes, or until the bottom is golden brown. Flip crepe and cook for an additional 2 minutes. Set on plate and repeat with remaining batter.

Spread a thin layer of peanut butter onto crepe and place banana slices down the center. Roll crepe and top with whipped cream before serving.
