Add some spice with this summer side dish. Corn recipes don’t get much better than this!
What you’ll need:
- 6 large ears sweet corn
- 2 Tbsp. butter, melted
- 1/2 cup light mayonnaise
- 1 chipotle pepper in adobo sauce, seeds removed and finely chopped
- 2 Tbsp. minced fresh cilantro
- 2 Tbsp. lime juice
- 1 1/2 tsp. lime zest
- 1 tsp. salt
- 1/2 cup grated Parmesan or Asiago cheese
Preheat oven to 300º.
Remove husks and silk from corn and place in a 9 x 13-inch baking dish coated with cooking spray. Brush each ear with melted butter and cover the dish with foil. Cook corn for 30 minutes covered. Remove the foil and cook for 15 minutes more.
In a small bowl, combine mayonnaise, chipotle pepper, cilantro, lime juice, lime zest and salt. Spread mixture over each ear of corn and sprinkle with cheese. Bake 5 more minutes to melt cheese.
