taco pasta salad

This Chicken Salad recipe is a perfect dish for picnics, family reunions or even just dinner!

What you’ll need 

  • 2 cups uncooked pasta of choice
  • 1-2 cups cooked shredded chicken breast
  • 1 envelope taco seasoning
  • 1/3 cup taco sauce
  • 3 cups shredded iceberg lettuce
  • 1/2 cup shredded Cheddar cheese
  • 1/2 cup chopped tomatoes
  • 1 (2.25 oz.) can sliced olives, drained
  • 1/4 cup chopped green onions
  • 2 Tbsp. ketchup
  • 2 Tbsp. brown sugar
  • 2 Tbsp. red wine vinegar
  • 1/4 tsp. onion powder
  • 1/4 tsp. paprika
  • 1/2 tsp. Worcestershire sauce
  • 1/4 cup olive oil
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • sour cream for topping

Cook the pasta according to package directions. Drain and rinse.

Stir shredded chicken with taco seasoning and taco sauce in a large bowl. Add pasta, shredded lettuce, cheese, tomatoes, olives and green onion.

For the dressing, combine ketchup, brown sugar, red wine vinegar, onion powder, paprika, Worcestershire sauce, olive oil, salt and pepper. Pour desired amount over salad and mix. Serve with a dollop of sour cream overtop.
