Quinoa Sliders

These mini patties are great for vegetarians!


  • 2/3 cup quinoa
  • 3/4 cup seasoned bread crumbs, or as needed
  • 2 eggs
  • 1 cup grated zucchini
  • 1/2 cup Parmesan cheese
  • 1/4 cup chopped chives
  • 3 cloves garlic, minced
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1/4 cup olive oil for frying
  • Mini burger buns, lettuce, tomatoes, onion and pickles, for serving

In a medium saucepan, cook the quinoa according to package directions; cool completely.

In a bowl, whisk the eggs. Squeeze the liquid from the zucchini and add to eggs. Stir in the cheese, chives, garlic, salt and pepper. Mix in the quinoa and bread crumbs. Let stand for 10 minutes.

Using a 1/4-cup measure, form into a 1/2-inch-thick patties. In a large nonstick skillet, heat 1 tablespoon oil and fry 6 patties at a time until golden brown, about 3 minutes on each side. Repeat with the remaining patties and oil. Serve with buns, lettuce, tomatoes, onion and pickles.
