  • 2 Gala or golden delicious apples
  • 2 bananas
  • 2 ripe, but firm peaches
  • 4 fresh pineapple spears
  • 8 fresh strawberries
  • 1/2 lemon
  • 32 fresh mint leaves sugar
  • 1 cup Gia Russa Ricotta Cheese
  • Gia Russa Balsamic Glaze
  • Skewers (if wooden, soak for 30 minutes in water)

Core the apple, and cut into 8 wedges. Peel banana and cut into 8 slices. Squeeze lemon juice over apple wedges and banana slices. Cut pitted peaches into 8 wedges. Cut tops off strawberries. Skewer the fruit: apple, banana, peach, pineapple, strawberry, with mint leaves between each fruit. Sprinkle with sugar. Let stand until sugar dissolves, about 5 minutes.

Lightly brush grill rack with oil. Grill fruit until lightly browned and softened. Remove from grill. Mound Ricotta cheese, place two Spiedini alla frutta over the Ricotta, and drizzle with balsamic glaze.
