rice smothered burritos

Ingredients 

  •  1 lb. ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup can tomato sauce
  • 1 cup salsa
  • 1 Tbsp. taco seasoning
  • 1 tsp. cumin
  • 3 cups shredded Cheddar cheese, divided
  • 1 (15 oz.) can refried beans
  • 1 cup cooked rice
  • 1 tsp. cumin
  • 1/2 tsp. garlic powder
  • 10 flour tortillas

Preheat oven to 350°.

In a large skillet, brown hamburger with onion until cooked through. Add garlic and cook 1 minute more. Add tomato sauce, salsa, taco seasoning and cumin. Simmer on low heat while assembling burritos.

In a large bowl mix together beans, rice, cumin, garlic powder and 2 cups of cheese. Spread rice mixture on each tortilla. Roll up and place seam down in a greased 9 x 13-inch baking dish.

Top rolled tortillas with meat mixture. Sprinkle remaining cheese overtop. Bake for about 20 minutes
