Peanut Butter Thai

Tuesday just got more interesting! Tacos are good, but when you add Thai flavor they become out-of-this-world delicious.

  • 4 boneless, skinless chicken breasts
  • 3 cloves garlic, minced
  • 3 Tbsp. soy sauce, divided
  • 2 Tbsp. rice vinegar
  • 1 Tbsp. sesame oil
  • 1 tsp. fish sauce, optional
  • 1 cup cole slaw mix
  • 2/3 cup finely sliced red bell pepper
  • 2 Tbsp. lime juice
  • 1/2 cup creamy peanut butter
  • 2 Tbsp. Sriracha sauce
  • 10 small flour tortillas, warmed
  • 1/4 cup chopped cilantro

In a large resealable plastic bag, combine garlic,

2 Tbsp. soy sauce, rice vinegar, sesame oil and fish sauce. Add chicken and marinate for 30 minutes to overnight.

Remove chicken from marinade and grill or sauté until cooked through; slice or shred chicken.

Meanwhile, in a medium bowl, combine cole slaw mix and bell pepper. Toss with lime juice. In a small bowl, mix together peanut butter and Sriracha sauce.

To assemble tacos, add chicken to tortillas, top with cole slaw mix, drizzle Sriracha peanut butter sauce on top and sprinkle with chopped cilantro.
