If you love bananas, you will love these! These chewy soft cookies are  one of a kind. Be sure to bake these for your next gathering.


  • 1 3/4 cups whole wheat or oat flour
  • 1 1/2 cups oats
  • 2/3 cup sugar
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1 Tbsp. ground flax seed
  • 5 Tbsp. butter, softened
  • 2 ripe bananas, mashed
  • 1 egg
  • 1 tsp. vanilla
  • 1/2 cup dark chocolate chips
  • 1/2 cup pecans, chopped

Preheat oven to 350º.

In a bowl, combine flour, oats, sugar, salt, baking soda and ground flax seed. Add butter and combine until the mixture has the consistency of coarse crumbs. In a separate bowl, mix bananas, egg and vanilla until combined and add to dry mixture. Stir in chocolate chips and pecans.

Drop mixture in tablespoons, about 1-inch apart on cookie sheet coated with nonstick cooking spray. Bake for 10 to 12 minutes. Makes 3 dozen.
