Avocado Salad A simple, delicious and healthy Spring salad done in minutes.

  • 2 avocados, peeled, pitted and diced
  • 1 (15 oz.) can black beans, drained and rinsed
  • 1 (14.5 oz.) can corn, drained
  • 1 (10 oz.) can diced tomatoes with green chiles
  • 1/4 cup finely chopped green onion
  • 1/4 cup freshly chopped cilantro
  • 1 Tbsp. lime juice
  • 1/4 tsp. salt

In a medium bowl, mix avocados, black beans, corn, tomatoes, onions, cilantro, lime juice and salt. Stir and serve with tortilla chips.
