Barbecued Pulled Chicken

We’re making our own barbecue sauce and it’s easier than you’d think.

 What you’ll need: 

  • 3 lbs. boneless, skinless chicken breasts
  • 1 tsp. freshly ground black pepper
  • 1/2 tsp. salt
  • 1 Tbsp. olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 Tbsp. tomato paste
  • 1 Tbsp. apple cider vinegar
  • 1 cup tomato sauce
  • 1 cup ketchup
  • 1 Tbsp. Worcestershire sauce
  • 1 Tbsp. brown sugar
  • 1 Tbsp. paprika
  • 1 Tbsp. dry mustard
  • 1 tsp. chili powder
  • 1/8 tsp. cayenne pepper
  • 1 cup water
  • 3 cups prepared coleslaw
  • buns for serving
  • Place chicken breasts in the bottom of a large slow cooker. Season with salt and pepper.

In a pot, sauté onion in olive oil for 2 to 3 minutes. Stir in garlic, tomato paste, vinegar, tomato sauce, ketchup, Worcestershire, brown sugar, paprika, mustard, chili powder, cayenne and water. Stir and cook for 10 minutes. Pour overtop of chicken and cook on low for 8 hours.

Remove chicken from slow cooker and shred. Add back to the slow cooker and stir to cover with sauce. Spoon chicken on top of bun and top with coleslaw.
